The Orkney Islands lie 10 miles north from the Scottish mainland where they are whipped mercilessly by wind and waves. Scattered up there in the North Sea, these wild islands are home to Highland Park, where Magnus Eunson set up his illegal still back in 1798. One unique feature of the landscape is that it’s almost impossible for trees to survive in the strong winds, so the peat used to malt the barley is woodless and instead is rich in heather. These unique flavours infuse the whisky made at Highland Park.
This bottle of Highland Park 16 Years Old was released in the mid-2000s. It has a soft nose with a floral character alongside honey, vanilla and raisins. The palate sees the return of the honey and vanilla this time with orange, peat smoke, polished oak and a sprinkle of salt. The finish is salty and spicy.
